I mentioned that I’m going to start sharing some recipes that I’ve been making as part of my weight loss journey or making better food choices.

Stuffed pepper soup
Ingredients
1 lb ground beef browned and drained
1 medium onion diced
3 bell peppers diced, any colors
2 cups beef broth
14.5 oz can petite diced tomatoes
14.5 oz can tomato sauce
2 teaspoons granulated garlic dividied
1 teaspoon parsley
1/2 teaspoon salt
2 cups white rice cooked, use 1 cup if you prefer less rice
Instructions
Brown the ground beef with 1 teaspoon granulated garlic, salt, and pepper to taste, once almost browned add in the diced onion.
Add all of the ingredients into the crock of your crockpot slow cooker.
Cook on low for 6-8 hours or high for 3-4 hours.
In the last 5-10 minutes, stir in the rice.
Serve once the rice is warmed throughout.
I didn’t quite follow the instructions. Instead of ground beef, ground pork was in the freezer. Didn’t use the salt or rice. Used riced cauliflower instead. Dumped everything into the crockpot except the riced cauliflower, added it 30 minutes before I served. It was in a steamer bag. Heated it according to package instructions then added. For me, it’s a little thin. Next time, I’m gonna cut back on the broth. But it is delicious.

This looks delish- and it is definitely crockpot season up here. Ground beef is a minimum of $10 a pound up here so I will sub TVP for the meat- and use the 1c of rice as I have a ton of it. I will have to wait till I shop again on Friday- but I will def be trying this. I’ll let you know how it turns out.– Girl, good thing you posted this when you did cuz my broth is set to expire on the 13 of this month! hehehehe

Wonderful! I had it for lunch and it was delicious -and so easy. I fixed the rice separately and added it when I heated it up. If you come up with anything else post it because I am like so burnt out on eating the same things that I know aren’t fattening. Thank you ☺️❤️

Made egg drop soup for dinner tonight. My stomach is hurting, so didn’t use a lot of spices. Aka flavor this time.

I have a hard time understanding a brothy soup is the meal. That’s what I liked about the stuffed pepper one- by the time I get it on the rice- there’s hardly any broth and I feel like I’m eating something substantial- just low in calories. I would probably need half a loaf of bread to convince myself I already ate with the egg drop kind! heheheheh

I didn’t know about egg drop soup until I went to college. Then it seemed so exotic because I only saw it in Chinese restaurants. And what I saw was thin and didn’t look like much. Since I’ve started this new learning path, I’ve been watching a lot of cooking videos. You can put as many eggs in it as you want. But I totally get the not feeling like a meal idea.

Don’t know what kind of freezer space you have, but I freeze just about everything. Peppers, broth, meat, riced cauliflower, tomato sauce, diced, tomatoes- freezer.
