I got this recipe off YouTube. But changed it to utilize what I already had.
Original;
ground beef : 1 lb ( 450 g)
olive oil : 2 tbsp
salt and pepper to taste
a small head of cabbage : about 6 heaping cups, roughly chopped
salsa : 3/4 cup
taco seasoning : 3 tbsp
water : 1 tbsp ( if cabbage looked dry while cooking add a little more)
cooked beans : 1/2 cup ( any kind work, black beans are best for adding a pop of color )
mozzarella : 3/4 cup ( or cheese of your choice )
fresh cilantro for topping
I have a roll of taco seasoned turkey in the freezer. There wasn’t enough fat from the turkey to cook the cabbage so I added about 1/2 of chicken bone broth, not the water the recipe called for. Didn’t add the cheese, forgot. Did’t add the salsa because the southwest beans I added gave the dish a lot of flavor.
Fry meat in a pan just like you would for tacos. Drain fat if necessary. When cooked add taco seasoning and water (bone broth will add more protein to this recipe). I added some minced garlic and onion flakes to the meat while it was frying. Added cabbage and cooked for about 15 minutes until cabbage is tender.
Divided this into 4 servings but in all honesty, 2 would have been more filling.

I will have to buy a head of cabbage next week. I love cabbage and will try any recipe that I find that has it in there. I will give this a try after next Fridays shop. This week it is Bird’s Eye Normandy vegetable blend- white rice and a variety of Asian themed sauces to make it seem like a different meal every day.

It is so easy and quite economical as long as you don’t go hog wild on the sauces.
