Growing up, my dad suffered with horrible acid reflux. He called it the ‘strong neck’ or ‘sour neck’. The 2 were interchangeable. Many years ago I went to the doctor and had a barium swallow performed. I was in my early 30’s? Scared and stupid. Had to drink this chalky white stuff, got strapped to aContinue reading “My last weight loss journey: here we go again”

Cottage Cheese Fudge?
Am I kidding? No. And this is really good. My only complaint is that I couldn’t get the cottage cheese creamy enough. My fudge was a little lumpy. 1 bag of chocolate chips, melted. I melted mine double boiler style. You can melt them in a microwave; just make sure not to cook them. 1Continue reading “Cottage Cheese Fudge?”
I did it,
For the month of November, I did the walking challenge 100 miles. 3.5 miles per day. I did it. A few days were really hard. Didn’t feel good. Tired. Just wanted to go to bed. But I did it. What did I win? Just the knowledge that I can do 3.5 miles a day.
Shepherd’s (cottage) pie
Autumn’s Shepherd’s Pie [Healthy, High Protein, Low Carb] I read somewhere that it’s Cottage Pie if you don’t use lamb. Serves 4 Ingredients: 1 large head cauliflower, washed and roughly chopped 1 pound ground beef (or ground lamb, if making a “true” Shepherds Pie) 1 tsp. olive oil 1 tbsp. fresh rosemary, chopped (or 1.5Continue reading “Shepherd’s (cottage) pie”
Made it so far 🎉
November 15 marked the half way point of the month. I have been able to walk 3.3 miles each day. Yeah me. 🎉 I admit, someday I only make the 3.3 miles.
Taco cabbage
I got this recipe off YouTube. But changed it to utilize what I already had. Original; ground beef : 1 lb ( 450 g) olive oil : 2 tbsp salt and pepper to taste a small head of cabbage : about 6 heaping cups, roughly chopped salsa : 3/4 cup taco seasoning : 3 tbspContinue reading “Taco cabbage”

I’m not going to do a day by day update. I will only post on this, the first day. The 15th and the 30th; unless I walk somewhere really pretty. No worries that I’m going to flood your feed. 😉 3.3 miles for me is 8,600 steps (there about. According to Google). I’m short withContinue reading “Walking challenge: day 1”

Stuffed Pepper Soup
I mentioned that I’m going to start sharing some recipes that I’ve been making as part of my weight loss journey or making better food choices. I didn’t quite follow the instructions. Instead of ground beef, ground pork was in the freezer. Didn’t use the salt or rice. Used riced cauliflower instead. Dumped everything intoContinue reading “Stuffed Pepper Soup”
